FFWD - Ispahan Loaf Cake

I was excited to make this cake, it was my first time using almond flour, and after making a small investment in rose syrup and rose extract I was hoping it was going to be a winner!  IT WAS!  I didn't tell my husband what was in it, I wasn't sure that he would want rose anything in his cake!  But he really liked it!!

Dorie said the cake would be a pink color...the only pink for me was the raspberries!  But the taste was just as she described it...haunting, with a soft crumb, and very moist!

This is the first layer of raspberries...another layer of batter was added...then another layer of raspberries...
Finally the last layer of batter...I almost didn't save enough batter, but worked at it a little and I was able to cover the cake.
All baked and cooling...I was very anxious to cut into it to see the berries!

I love the way it looks...a perfect cake to go with tea!  I have to admit it is even good for breakfast with coffee!

So glad I made the investment in the rose syrup and rose extract...I look forward to making this again!

  2. Yeah, I didn't get a pink cake either, but maybe that was a good thing for when I served it to my husband! ;) Your cake looks terrific!

  3. You did a great job with the raspberries! Mine sank, but the cake was amazing in flavor anyway.

  7. Glad to hear that your cake was a complete success! It look delicious. My brand of syrup turned my cake very pink. It was not a natural look. I prefer the way everyone's cake-colored cakes look.

  8. You are going to get a lot of mileage out of that almond flour! The almond crusted fish is my favorite recipe from the book. Glad you enjoyed this one!

  10. Yay! Glad this was a hit for you.
(I didn't tell The Dude what was in it until after he said he liked it... Sometimes you have to use strategy!)

  11. Your cake looks delicious and I am glad you liked it. I almost ran out of batter also. Don't you think this was a cake where you had to gather the ingredients and go through the process once? Now, it will be easier. We have the ingredients. We can use whatever fruit we wish. And, wow, what a tasty treat. I am so glad Dorie put this in her book. I think you didn't get the "pink" -neither did I - because the rose syrup wasn't pink enough. I made my own and did not add red coloring to the syrup.
