FFWD - Cheating On Winter Pea Soup


We love soup in our house ... although this is a pretty green ... I wasn't too sure about it ... UNTIL I tasted it!!!  What a delicious soup this is.  Just a few ingredients too -- onion, vegetable broth, frozen peas, and romaine lettuce. Adding romaine sounded a little strange ... but that little voice in the back of my head said ... go with it and trust Dorie!!!


Cook onions till wilted and then add broth, frozen peas, and romaine lettuce!  Simmer for 10 minutes.


Working in SMALL batches, puree the soup....REMEMBER to cover blender or you will have green soup all over!!
This soup is so good hot..or cold!
 
 
We enjoyed our soup with this French style Flat Bread with Ham, Caramelized Onions & Gruyere Cheese pizza from Trader Joe's!

  1. I think we all wondered about boiling lettuce for soup but it worked didn't it:) I wish we had a Trader Joe's!

  5. Yes the lettuce was odd but when you think about it, you can really add any veggies to a soup, especially when you are blending it!

  7. I ALWAYS use a towel, since that time (20 years ago) when it sprayed into my eye and I had to go to the doctor. No harm done, but it was scary. I really enjoyed this soup too. I was skeptical about the lettuce. That pizza looks incredible. I've never seen that at TJ's but will look for it next time I go there. Have a great weekend, Kendra.

  10. Ah yes, cover the blender... I forgot that too and almost got sprayed with pea soup, very ala Linda Blair from the Exorist. So glad you enjoyed the soup.

  13. I am not a pea fan at all and was borderline shocked that I liked this soup. Funny too because I visited Trader Joes recently and loaded up (had not been in a while) but now need to go back to get that flatbread pizza !!!Apologize for the late comment- I had too much fun running around seeing the Barefoot Contessa and cooking and ended up with a miserable cold (but it was worth it). Glad I had so much soup to enjoy ~ PS- love that presentation in the beautiful bowl. Gorgeous.
