Long and Slow Apples - FFWD

  
This was an easy dish to prepare and I had everything in the house I needed!!  It tasted GREAT (what I could eat) loved the ginger and ground coriander mixed with the sugar, it really had a wonderful taste.   But .... I had a problem with the plastic wrap!! Dorie said don't worry it won't melt...mine disappeared on top - it was still on the sides of the dish though.  I am anxious to hear if anyone else had this problem.  I am wondering why the directions had us use it anyway.  I did turn them over and I ate a little off the bottom, thinking the plastic would only be on the top layer.  So sad this happened because the taste was incredible!  I will definitely make these again WITHOUT the plastic wrap!

Placed a mug on top and into the oven for 2 hours at 300 degrees.





After two hours --- they really bake down a lot.



I can't wait to make these again!



This is the plastic wrap I used that DID NOT work!


You can find this delicious recipe in the book Around My French Table by Dorie Greenspan on page 390.  The ingredients are simple (sugar, ground ginger, ground coriander, orange zest,  apples and butter.)  JUST DON'T USE SARAN WRAP to cover them!

  1. Oh no! I'm so delinquent that I haven't made this yet, but now I'll be sure not to use the plastic wrap. I was going to hold my breath and trust the instructions, but now, I think not. Sorry it melted on yours!

  3. Kendra, I used the plastic wrap I bought at either Sam’s club or Costco…It says Bakers and Chefs Professional Plastic Wrap. I also think the wrap has to be completely covered by the foil. Your apple dish looks beautiful!
    How exciting that you’re going to NYC! There’s a lovely restaurant called Bistro Milano on 55th street between 5th and 6th Ave. I’ve eaten there twice and really enjoyed it. Food was delicious! You could also try Lidia’s Becco, on Restaurant Row, 355 W. 46th St. in the Theater district. Make a reservation for Becco…but even if you don’t get one give it a try. We couldn’t get a reservation and went there anyway and they sat us right away.
    As a foodie, the one place you will really enjoy seeing is Chelsea Market on 75 9th Ave. It’s downtown…but definetly worth the trip. There’s an Amy’s Bread, along with many other great places. The Lobster Place is a great place to have lunch, but be sure to secure a place to sit before you order…not many tables. Most people find tables in the public hall area. Great food. The food network used to film there…not sure if they still do. Just a few of the many wonderful places to eat…enjoy your trip and let me know what you did!

  5. Oh, I am so sorry this happened! You are the second person and a different plastic wrap! :( Your apples look just gorgeous, too!

    I get Martha's parchment lined foil at Safeway. I don't know if you have that store there or not, but I have seen that Reynolds now makes some. I haven't tried theirs, but if you see it you might want to try it.

  7. Yikes...sorry about the melted Saran wrap. My Glad Cling did not melt, but I think next time, I'll look for Elaine's recommendation. It was a winner nonetheless :) Glad you enjoyed, too!

  8. I guess many found out there are different kinds of plastic wrap! I only used foil. Your apples are gorgeous, so deeply colored!

  10. Kendra, I will not talk about the plastic wrap issue - it's been dealt with admirably by the other Doristas. Yes, the apples are delicious even though they do bake down. I hope you will try them again and put a great big plop of cream on the top. It's heaven. Have fun in NYC. I have Big Apple-envy.

  11. So sorry about the plastic wrap. Seems like the book has been improved in later versions, thankfully. Mine says to use the plastic, but fortunately didn't melt. These are tasty, so you should try again sans plastic.

  12. Yes - the plastic wrap seemed to be the issue of the week.

    But even though they baked down, these were a tasty treat.

    Enjoy NYC - Chelsea Market is one of my favorite places. Great place to catch lunch (and shop...)

  13. I was lucky enough to read on the P&Qs that the plastic wrap was a problem. Mine were in the oven so I removed the plastic just in time. These apples were very good and I agree with you about the spice. It was a nice change wasn't it?

  15. It's too bad that some of us have older editions of the book - I know those directions caused me so much consternation I decided to do without the plastic and hope for the best. Newer versions of the book call for rounds of parchment paper instead. At least you got to taste a little bit.

  16. I was in the melted plastic category too ! My copy didn't mention parchment. Live and learn. Your apples still looked lovely. I also see comments indicating you are heading to the Big Apple. Enjoy. Nana and I did a road trip from Philly a few years back and hit Chelsea Market and Mario Batali's Eataly. You are inspiring me to go back. Enjoy your trip.
